Eyeball cupcakes

Happy (Belated) Halloween! I hope everyone had a great weekend. Halloween isn't very big in England but I'm American so I needed to do something. After much pondering I settled on cupcakes!
These are my basic yellow cupcakes (recipe here) dyed pink-orange with food coloring. I then topped them with a marshmallow frosting. Once frosted I put them under a broiler for a just a few minutes to brown the outside. Alternatively you could use a cooking torch. Next I sprayed the cupcakes with Wilton's food color spray (which I don't really recommend) and topped with a gummy eye. Pretty fun and they taste great (even after 5 days of being in the frig). I'm not a huge fan of sweet frosting so this frosting was great for me. (Plus, I love marshmallows). I kind of think I'll be using this frosting alot.
Recipe for marshmallow frosting (frosts 24 cupcakes): Ingredients:
- 1/2 cup + 2 tbls sugar
- 3 tbls water
- 3 large egg whites
- 1/4 tsp vanilla extract
Directions:
- Place 1/2 cup sugar and the water in a small pan. Stir to wet sugar. Bring to boil over med-high heat, swirling the pan occasionally. Turn down heat and simmer gently.
- Place the egg whites in bowl and whip on low speed until soft peaks form. Gradually add remaining sugar and continue whipping until stiff peaks form.
- Bring the sugar-water mixture to a rapid boil (temperature 250F/120C or when a bit dropped into cold water forms a firm ball). The syrup should be thickened but not colored.
- Pour a thin but steady stream of the syrup over the egg whites being careful not to touch the sides of the bowl or the whisk. Whip on high speed until cool to the touch. Beat in vanilla extract
- Use immediately to frost cupcakes.
