Cheddar apple pie cupcakes

These cupcakes are my entry for Iron Cupcake:Cheese. When I first heard the ingredient I knew I had to use cheddar. The progression to using apples as well naturally followed. These cupcakes taste exactly like apple pie. In fact, I prefer them to apple pie because I'm not a big fan of pie crust. However, I'm not sure if I prefer them to apple crumble BUT next time I make these I will try them with a crumble topping instead of a cream cheese topping and see what they are like. The recipe that follows is my own creation.
Ingredients: (Makes 18 cupcakes)
- 2 c. flour (250g)
- 1/2 c. sugar
- 2 tsps baking powder
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- 2 eggs, slightly beaten
- 3/4 c. milk
- 1/4 c. vegetable oil
- 1/4 c. unsweetened applesauce
- 1/2 tsp vanilla
- 1/2 c. cheddar cheese, finely shredded
For filling: Approx 1/3c apple pie filling or applesauce (normal or chunky). I made my own filling by simmering 4 cups chopped apple in 1/2c water and 1/4 tsp cinnamon until apples are mushy. Then mush with potato masher.
For frosting:
- 8oz cream cheese
- 1/4 c. butter
- 2 1/3 c. powdered sugar (more or less will be needed depending on how sweet you like your frosting)
Method
- In large mixing bowl, combine dry ingredients (except for cheddar).
- In small mixing bowl, combine other ingredients.
- Mix contents of small bowl into large bowl until combined. Stir in cheddar.
- Fill cupcake liners a little less than 2/3rds way full.
- Top each cupcake with a tsp of filling.
- Bake in a 350F/170C oven for 20 min. Cupcakes are done when toothpick inserted diagonally at edge (to avoid filling) comes out with a few moist crumbs.
(P.S. I know that there are only 14 cupcakes in these pictures, but I overfilled them and the apple filling started to drip out on some of them. Next time I will make 18.)
To make frosting simply combine all ingredients in bowl
Now, I personally think these cupcakes are best served warm but I also like my apple pie warm. So I would frost and serve immediately upon removal from oven. Or leave them unfrosted and then before serving heat them up in the microwave for 15 seconds each and frost. However they are very good cold, assuming you like the taste of cold apple pie.

i love the cheddar cheese and apples. i never make an apple pie without a little cheddar or gruyere (or both). these look delicious :)
@heather: The cupcake liners are made by Calphalon. I got them at Target but you can get them through amazon as well (the link should be in my store--button at the top of this page)
i think that cheddar and apples go really well together . I have to try this recipe :-)
when do you add the cheddar? fold it in before the topping goes on?
