Marshmallow Frosting

Ingredients:

  • 1/2 cup + 2 tbls sugar
  • 3 tbls water
  • 3 large egg whites
  • 1/4 tsp vanilla extract

Directions:

  1. Place 1/2 cup sugar and the water in a small pan. Stir to wet sugar. Bring to boil over med-high heat, swirling the pan occasionally. Turn down heat and simmer gently.
  2. Place the egg whites in bowl and whip on low speed until soft peaks form. Gradually add remaining sugar and continue whipping until stiff peaks form.
  3. Bring the sugar-water mixture to a rapid boil (temperature 250F/120C or when a bit dropped into cold water forms a firm ball). The syrup should be thickened but not colored.
  4. Pour a thin but steady stream of the syrup over the egg whites being careful not to touch the sides of the bowl or the whisk. Whip on high speed until cool to the touch. Beat in vanilla extract
  5. Use immediately to frost cupcakes.

Sausage and Egg casserole

Serves 6-8. Source: Trot Nixon (care of the Red Sox cookbook)

Ingredients:

  • 1 pound sausage, browned and crumbled
  • 6 eggs, beaten
  • 2 cups milk
  • 8 ounces sharp cheddar cheese, grated
  • 6 slices bread, cubed
  1. Combine all ingredients.
  2. Pour in a 9x13 casserole dish.
  3. Cover and refrigerate overnight (this step can be eliminated if necessary, but it makes the casserole so much better)
  4. Bake at 350F for 1 hour, or until firm.

Boston Cream Cupcakes

Makes 12 cupcakes

Basic Steps:
1) Make 12 yellow cupcakes using your favorite recipe.
2) Make pastry cream and fill cupcakes.
3) Make chocolate frosting and frost cupcakes immediately. Put cupcakes in the frig to let topping harden.

Pastry Cream:
2 tbls + 2 tsps sugar
2 egg yolks
4 tsps flour
2/3 cup milk
1/4 tsp vanilla extract

Method
1) Mix the sugar and egg yolks together until the yellow color fades a bit.
2) Stir in the flour.
3) Heat milk until it just starts to simmer.
4) Slowly stir in about 1/4 of the milk to the sugar/egg/flour mixture. Then add in remaining milk, stirring the whole time.
5) Pour mixture back into pan and heat on low-med unti thickened, again stirring the whole time.
6) Remove from heat and stir in vanilla extract.
7) Cover and let chill.
8) Fill cupcakes with about 1 tbls pastry cream.

Frosting:
100g chocolate
1tbls butter

Method:
1) When cupcakes have been filled and are ready to frost, melt chocolate with butter either on the stove top or in the microwave.
2) Frost cupcakes immediately.

Yellow Cupcakes

Makes 12 cupcakes

Ingredients:
-1 1/2 cups Flour
-1 1/2 tsps Baking powder
-1/4 tsps Salt
-1/2 cup Butter
-3/4 cup Sugar
-2 large Eggs
-1 1/2 tsp Vanilla extract.
-1/2 cup Milk

Method:
1) Preheat the oven to 350F/170C
2) In a small bowl, mix the first three ingredients set aside
3) In a large bowl, cream the butter with the sugar then add eggs one at a time. Stir in vanilla extract.
4) To the large bowl: add the flour mix and the milk, in alternate increments, ending with the flour mix.
5) Spoon into cupcake wells and bake for 18 minutes, or until an inserted toothpick comes out with a few moist crumbs.
